Organic Peeled Black Garlic Introduction
As is well known, Black Garlic is a white bulb left to ferment in a Black Garlic Machine. Bulbs are stored at controlled humidity and temperature for around 15-20 days. Bulbs develop the same colour and aftertaste as liquorice, perfect for various pairings including meat, fish, first courses and even desserts.
White garlic bulbs are aged (caramelized) for one to two months using controlled heat and humidity. This process causes certain enzymes and sugars in the cloves to break down naturally – nothing is added. So black garlic is also called Aged Black Garlic .
Peeled Black garlic, a kind of black garlic , is made from white garlic after being peeled and fermented. So the composition and efficacy of black garlic and Peeled Black Garlic is the same.
